      <image:caption>I grew up on a sheep and beef farm in the foothills of Mt Holdsworth in the Tararua Ranges, learning all about work ethic and how to love and respect food. It all seems so natural to me, where food comes from, but I see the need to reconnect the urban and rural communities with the farms and growers that produce our food. Everyone needs to know where their food comes from and how to feed themselves well. Seeking out the freshest and most nutritious produce, along with growing what I call “a trail and error vegetable garden” and as many fruit trees as can fit in my patch of land inspire me to cook simple food that is flavour-forward – the starting place for all my recipes and images. What else… my work can be found in Nourish Magazine, on the Beef + Lamb New Zealand website, and recipes and images on The Outstanding Producer Awards website, as their food editor. My work has been seen in the New Zealand Herald, over 600 recipes now can be found on Eat Well, and more recently I edited the award-winning The RNZ Cookbook. A past president of Food Writers NZ and now have been made a life member. In 2024 was named one of 50 most influential and inspirational women in food and drink in New Zealand. Latest project – The New Zealand Food Communicators Scholarship. A not-for-profit charitable trust giving two emerging food communicators each year, a three-month scholarship with the purpose to educate and inspire. We provide in person and online support and mentorship sessions and workshops that foster career development within the food communication industry in New Zealand. Picnic cakes, school fair cakes, cake to feed the shearers or contractors all interest me. To achieve maximum moistness it doesn’t bother me if a cake sinks slightly in the middle. After all there are many ways you can disguise that if need be. Cakes with great flavour don’t even need to be iced although I often can’t resist a dusting of icing sugar. I love a good recipe for any flavour of loaf, they slice so beautifully and recipes for crispy, buttery biscuits. Let’s bake memories one recipe at a time.</image:caption>

      <image:caption>There’s a bag of buckwheat flour in the pantry so have been searching my cookbooks and the net for ideas using buckwheat flour. I came across an Apple, Almond &amp; Buckwheat Muffin recipe from Green Kitchen Stories - it appears to be a well-loved recipe. These muffins are not at all sweet. The only sweetness comes from the dates - almost what I would call a breakfast muffin. I have adapted the recipe to suit what’s in the pantry and changed the method into my own style of writing, but I acknowledge the original recipe is from Green Kitchen Stories. Make up the apple sauce for the muffin mixture and filling ahead of time, even the day before is good, just keep covered in the fridge. I like to cook extra apples and then use in my morning porridge. Annoyingly, there is too much mixture for a 12-hole muffin tin, but I can’t throw anything away so baked 2 muffins separately.</image:caption>

      <image:caption>Pears sit among my favourite fruit - you will often see me using pears in recipes. A Packham pear would be my go-to pear, but there are many other worthy varieties too. Along with tomatoes and avocados, pears need to ripen. Unripe pears are very firm, gritty and dry so do buy ahead and ripen your purchase. A pear ripens from the centre so keep an eye out and your sense of smell sharp. As a pear ripens is becomes fragrant, so sniff away. Ripe pears are juicy and buttery and there is nothing better than eating a perfectly ripe pear with its juice running down your hand.</image:caption>
